The small round ġbejna cheeselet, which is made from sheep’s milk, is a very popular traditional food item in the islands of Malta and Gozo.
There are three types of ġbejna:
Gbejniet friski – Fresh soft cheese that is stored in its natural state and tastes very similar to mozzarella.
Gbejniet moxxi – Dried cheese that has a spicy taste with hints of nutmeg.
Gbejniet tal-bżar – Dried cheese with black pepper.
The dried ġbejna cheese is an excellent combination and an appetiser with dry Maltese wine. But fresh, soft ġbejna cheese can be eaten with crunchy Maltese bread for breakfast. Be sure to try the traditional Maltese “widow’s soup”, which is prepared with hints of soft, fresh ġbejna cheese.
